The Perfect Snow Day Meal

1. Slow Cooker Chili

This chili is perfect for bean-lovers because and it’s equally delicious with our without ground meat. It’s also great for little chili lovers because you can sneak shredded vegetables in without anyone noticing.

Ground chicken, turkey or extra lean ground beef (optional)
2 – 28 oz cans diced tomatoes
1 – 28 oz can or jar of crushed tomatoes
2 tbsp chili powder
1 tbsp oregano
1 tsp paprika
1 tsp salt
pepper to taste
pinch of dried pepper flakes
2 – 28 oz cans red kidney beans
1 – 19 oz can black beans
1 – 19 oz can chickpeas
2 – 14 oz cans brown beans in tomato sauce
2 carrots finely grated
1 zucchinni finely shredded
½ cup diced onion
2 cloves crushed garlic

Spray slow cooker with no stick spray or olive oil.
If adding ground meat place in bottom of slow cooker before other ingredients.
Pour tomatoes over meat.
Add spices and herbs.
Add all beans and vegetables to slow cooker.
Cook on high for 4 hours or low for 6-8 hours.


2. Apple Crisp + Vanilla Ice cream

“I know that comes off a little confidant, but just trust me — this Apple Crisp recipe is the best! It’s so incredibly easy to throw together and the flavors are A-Mazing! A lot of people like Apple Crisp served with ice cream, but I honestly could care less about the ice cream here–it tastes too good on it’s own!”

For the crumb topping
1/2 cup flour
1/2 cup old fashioned oats
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp ground cinnamon
dash of salt
1/3 cup unsalted butter, diced into small chunks

For the Apple filling
3-4 large Granny Smith apples, peeled and sliced thin
3 Tbsp butter, melted
2 Tbsp flour
1 Tbsp lemon juice
3 Tbsp milk
1/2 tsp vanilla extract
1/4 cup brown sugar
1/2 tsp ground cinnamon
dash of salt

Preheat oven to 375 degrees F.
In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs. Refrigerate while you prepare the apple filling.

For the Apple Filling
In a small bowl, combine melted butter and flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt. Pour butter mixture over apples and toss to coat. Pour apple mixture into an 8×8-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples. Bake for 30-35 minutes or until golden brown and top is set. Remove from oven and allow to cool for at least 10 minutes before serving.
